It all started in 1994 in Aspen, Colorado, the year Keith Herbert decided to put his life as a ski bum behind him. "Herbie" as he is known, traveled to Italy to study the espresso masters to perfect the art of coffee...and decided to pursue a life of coffee.

Upon his return, a 6ft stainless steel cart located in Snowmass Village was to good to pass up. And ink! Coffee Company was born!

It wasn't long before the coffee cart couldn't keep up with demand so ink! Coffee relocated to Durant street across from the Gondola in downtown Aspen. It quickly became the locals' favorite and the awards and recognition started pouring in. To ensure the utmost quality, ink! Coffee acquired and developed a private roasting plant in nearby Basalt - where shipments of the finest beans are now roasted to perfection.
